Recipe: Zesty tasty tacos

Recipes | Videos | April 23, 2021
Meat-free meal option.

This recipe calls for tofu, but any favorite protein can be used as a substitute. If you’ve never had tofu, then this may be a great recipe to start with as it’s seasoned with delicious taco flavors.

Serves 4

  • 16 ounces soft tofu, pressed (other protein options: tempeh, chicken, turkey, etc.)
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 2 tablespoons Braggs Liquid Aminos
  • 1 tablespoon maple syrup
  • Finely chopped and seeded jalapeno, optional
  • Cauliflower rice, optional
  • Diced onions, optional
  • Additional taco toppings e.g. mixed greens, cheese, sour cream, tortilla, etc., optional

In a square 3x3 baking dish, combine lime zest, lime juice, cumin, chili powder, Braggs Liquid Amino and maple syrup. Whisk the mixture together until combined. Add pressed tofu, or protein of choice, and let marinate for at least 30 minutes (the longer you can marinate the more flavor the tofu or protein source will have). Once it is marinated, cook tofu in a large non-stick skillet (or coat skillet with non-stick spray) over medium heat.

Optional, add diced onions and cauliflower rice to the skillet and then let the marinated tofu sauté over medium heat, stirring until combined and onions and cauliflower rice appear tan in color.

Remove from heat, serve in a tortilla or over mixed greens in a bowl, top with desired taco toppings (cheese, lettuce, salsa, sour cream, guacamole, cilantro, etc.).
