Recipe: Fruit and beet smoothie

Sweet fruit helps cut through the earthy flavor of the beets.

Blend up a nutrient dense and flavorful smoothie for breakfast or as a snack. Beets are packed with vitamin C, blueberries are a good source of fiber, vitamin C and vitamin K and carrots are loaded with vitamin A.

Serves 2

Ingredients

  • 1 cup frozen strawberries
  • 1 cup frozen blueberries
  • 1 cup orange juice
  • 1 (8.8-ounce) package refrigerated cooked beets
  • 1 medium banana, peeled
  • 1 medium carrot, peeled and sliced
  • 1 (1/2-inch) piece fresh ginger, peeled and grated

Directions

Combine all of the ingredients in a blender and process until combined, about 30 seconds. Divide between two glasses. Enjoy!
