Recipe: Mediterranean white bean salad

Quick and easy side dish

Serves 4

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 small clove garlic, minced/pressed
  • ¼ teaspoon kosher salt
  • Fresh ground black pepper
  • 1 pint cherry tomatoes, chopped
  • ½ cup loosely packed basil leaves, chopped
  • 1-15 oz. can no-salt-added cannellini, navy or other white beans, drained & rinsed

Directions

Whisk the first five ingredients together and then toss with the remaining ingredients.

Nutrition facts: 130 calories, 4 g total fat (0.5g saturated), 160mg sodium, 17g carbohydrate, 7g fiber, 6g protein
