Recipe: Mediterranean white bean salad

This quick and easy side dish calls for a handful of simple ingredients.

Do you know how much nutritional goodness is in 1/2 cup of cannellini white beans? It's packed with protein and fiber - 6 grams each. We have the perfect recipe to use cannellini beans, plus some other delicious ingredients.

Serves 4

Ingredients:

  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 small clove garlic, minced/pressed
  • ¼ teaspoon kosher salt
  • Fresh ground black pepper
  • 1 pint cherry tomatoes, chopped
  • ½ cup loosely packed basil leaves, chopped
  • 1 15-ounce can no-salt-added cannellini, navy or other white beans, drained & rinsed

Directions:

Whisk the first five ingredients together and then toss with the remaining ingredients.

Nutrition facts: 140 calories, 4 g total fat (0.5g saturated), 190mg sodium, 19g carbohydrate, 7g fiber, 6g protein
