| Recipes | Healthy You | Eating Right

Summertime side dish with a twist

This is not your average corn on the cob recipe. Flavored with lime zest and chili powder it packs a punch of flavor.

  • 4 medium ears of corn on the cob, shucked
  • 1 teaspoon lime zest
  • 1 lime juiced
  • 2 tablespoons softened light trans-fat-free margarine
  • 1 teaspoon chili powder

Preheat the grill to medium-high.

In a small bowl, mix together the lime zest, lime juice, margarine and chili powder.

Using a spoon and your hands, spread the mixture evenly over the four ears of corn.

Wrap the corn individually in aluminum foil. Grill 20 minutes, turning frequently. Serve warm.
