Recipe: Skinny chunky monkey cookies

This jazzed up oatmeal cookie doesn't have any sugar, flour or eggs.

A healthier (40 calories!) cookie without eggs or refined flour. You won't miss out on flavor though, because of the sweet chocolate chips and spicy cinnamon.

Serves 32

Ingredients:

  • 3 ripe bananas
  • 1/3 cup unsweetened apple sauce
  • 2 cups old fashioned oats
  • 1/4 cup milk (almond/soy)
  • 1/4 cup raisins/chopped nuts
  • 1 cup chocolate chips OR ¾ cup mini chocolate chips
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Directions

Preheat oven to 350 degrees. Mash bananas in a medium bowl. Add remaining ingredients to bowl and stir until mixed well. Let the dough set for approximately 20 minutes to allow oatmeal to soften.

Place teaspoon size ball (a small melon baller would work great) of cookie dough onto an ungreased cookie sheet. Bake for 15-20 minutes.
