Healthy and full of flavor smoothie.

Top o’ the mornin’ to ya. Make this healthy version of one commonly found at a fast-food restaurant for breakfast or as a snack. Filled with good-for-you spinach, sweet apples and mint, it’s a great option for practically any time of the day.

Serves 2


  • 1 cup chopped apple with skin on
  • 1 cup packed spinach
  • ¼ cup packed fresh mint leaves, about 25 leaves
  • 1 cup plain non-fat Greek yogurt (could use vanilla if preferred)
  • 1 cup water or milk of choice
  • 1-2 tablespoons chia seeds (depends on desired thickness of smoothie)
  • 2 teaspoons honey


Add all ingredients to a blender or food processor and blend until smooth.

Pour into glasses and serve or refrigerate.

Smoothie will keep in the fridge for a few days.
