Top o’ the mornin’ to ya. Make this healthy version of one commonly found at a fast-food restaurant for breakfast or as a snack. Filled with good-for-you spinach, sweet apples and mint, it’s a great option for practically any time of the day.
1 cup chopped apple with skin on
1 cup packed spinach
¼ cup packed fresh mint leaves, about 25 leaves
1 cup plain non-fat Greek yogurt (could use vanilla if preferred)
1 cup water or milk of choice
1-2 tablespoons chia seeds (depends on desired thickness of smoothie)
2 teaspoons honey
Add all ingredients to a blender or food processor and blend until smooth.
