Recipe: Chocolate Cherry "Ice Cream"

Guilt-free icy treat

Even if you didn't go running when you heard the ice cream truck music as a kid - we think you will enjoy this "ice cream." 

Serves 3 (1/2 cup servings)

Ingredients

  • ½ cup plain soy milk (or low-fat cow’s milk or other “milk” of choice)
  • ½ teaspoon vanilla extract
  • 1 tablespoon natural non-alkalized cocoa powder (avoid “Dutched” cocoa for the least processed cocoa powder)
  • 1 ½ cups frozen dark sweet cherries*
  • 4 small dates, pitted
  • 2 tablespoons sliced almonds (optional)

Directions

Blend all ingredients together in a high-powered blender or food processor until smooth and creamy. If using a regular blender, only add half the cherries, blend until smooth, then add remaining cherries and continue to blend. Put mixture in freezer safe container. Optional to top with sliced almonds.

Enjoy immediately or freeze. If frozen for more than 30-60 minutes, thaw slightly to serve.

*You can also use berries or banana instead of cherries. Freeze ripe bananas at least 24 hours in advance. To freeze bananas, ripen until they are speckled (at their sweetest point), peel and slice them and put into plastic bags.
