Did you know that two tablespoons of chia seeds contain double the antioxidants of blueberries, 41% of your daily fiber, six times more iron than spinach and six times more calcium than milk? This recipe makes it easy to get a lot of daily nutrients and flavor in one sweet treat.

Ingredients:                                                         

  • ½ cup chia seeds
  • 2 cups unsweetened vanilla almond milk
  • 3 Tablespoons pure maple syrup
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon almond extract
  • ½ cup chopped toasted pecans

Directions:

In a bowl or blender combine all ingredients except toasted pecans, blend until smooth. Transfer to 4 smaller bowls or leave in a large bowl. 

Cover and refrigerate for at least 3 hours or overnight. Top with toasted pecans just prior to serving.
