Healthy You: Stuffed Potatoes

Healthy party appetizer.

These potatoes are similar to twice-baked potatoes but without all the fuss and are much healthier.

Serves 24


  • 12 petite potatoes (1 pound 18-ounce bag. Red, golden, purple or white)
  • 1 (14-ounce) container of Toby’s Tofu Dip & Spread (or hummus)
  • 1 bunch of green onions
  • Paprika


Steam potatoes in a large pot over high heat for about 20 minutes.

Remove potatoes from the stove. Rinse with cold water until cool.

Slice potatoes in half and use a melon baller to scoop out the center.

Fill each half with Toby’s Dip.

Garnish with green onions and paprika as desired, depending on what flavor Toby’s is selected.
