Recipe: Refreshing berry ice cream

All of the creamy goodness without all of the calories and fat.

If you're craving ice cream, here's a recipe for a quick frozen fruit blend that's low in calories and fat.

4 servings

Ingredients:

  • 2 cups frozen berries (can be mixed or one variety)
  • ¼ cup of Stevia OR 2 Tablespoons of sugar
  • ½ cup vanilla almond milk OR ½ cup non-fat dairy milk
  • ½ teaspoon vanilla extract

Directions:

With a food processor, pulse frozen berries until chopped fine. Add Splenda/sugar while fruit is processing.

Add almond milk/non-fat milk and vanilla. Process until mixture is the consistency of ice cream. Serve immediately or place in alternate container and freeze for later.
