Broiled Trout Almondine

Serves 4


1 pound trout, divided into four 4-oz. servings
2 tablespoons olive oil
1/2 teaspoon sea salt, or to taste
pepper to taste
1 ounce slivered almonds
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley


  1. Place trout fillets on broiler pan. Brush trout with 1 tablespoon of the olive oil. Sprinkle with salt and pepper to taste.
  2. Broil 4 inches away from heat for approximately 5-10 minutes.
  3. While fish cooks, heat almonds in 2 tablespoons olive oil until fragrant. Add lemon juice and parsley. Pour over fish just before serving.
