Uncle Rick's Oatmeal Pancakes

Serves 4

Ingredients

1 cup thick rolled oats
1 cup low fat buttermilk
1/4 cup all-purpose flour
1 large egg
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon melted tub margarine
1 tablespoon sugar

Directions

  1. Mix buttermilk and rolled oats together the night before. Refrigerate.
  2. In the morning, mix in remaining ingredients.
  3. Cook on the griddle and enjoy!

Applesauce is a great topping.
