Uncle Rick's Oatmeal Pancakes

Serves 4
Ingredients:
1 cup thick rolled oats
1 cup low fat buttermilk
1/4 cup all-purpose flour
1 large egg
1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp melted tub margarine
1 tbsp sugar
Recipe Directions:
Mix buttermilk and rolled oats together the night before. Refrigerate.
In the morning, mix in remaining ingredients. Cook on the griddle and enjoy!
Applesauce is a great topping.
