Tuna Sandwich

Serves 4

Ingredients:


8 oz very low sodium canned tuna in water 
1/2 cup chopped red pepper
1/4 cup chopped red onion
1/4 cup lowfat mayonnaise
8 slices whole wheat bread
2 cups spinach leaves


Recipe Directions:

Drain tuna. In a small bowl, mix together tuna, red pepper, onion and mayonnaise. 

Line four slices of bread with spinach. Top each with 1/4 tuna mixture and top with remaining bread.
